Applications:
Gluconolactone can be used as stabilizer and coagulant, can be used in soybean products (tofu and bean curd), sausage (meat sausage), minced fish products and grape juice, the maximum use of 3.0g/kg; as a preservative, can be used for fish and shrimp preservation, the maximum use of 0.1g/kg, the residue of 0.01mg/kg; but also as a fluffing agent for the preparation of composite baking powder, the appropriate amount of use in accordance with the production needs.
Used as raw material for tofu coagulant, flavoring agent, pH lowering agent and bulking agent. In Japan, as a coagulant for tofu accounted for 50% -70% of the total amount of Japan, with the product made of tofu, pure texture, tender and delicious, and can extend the preservation time.
