The MSE PRO™ Lecithin, from Egg Yolk, Egg yolk lecithin comes from egg yolk, the main component phosphatidylcholine, can change the fatty acid composition and microstructure of animal cell membrane. Soluble in alcohol, ether, petroleum ether, chloroform, benzene, insoluble in acetone, water, acetate. It is hygroscopic. Swells in water and becomes gelatinous liquid. Darkens when exposed to air and light. It exists in amphoteric ion state at any pH, so it has surface-active effect. Sensitive to light. Hygroscopic.
