The MSE PRO™ Polyphenol oxidase, also known as tyrosinase, is a bifunctional copper-containing oxidase with catecholase and cresolase activities. Widely distributed in microorganisms, plants, animals and humans, in plants, tyrosinase is generally known as polyphenol oxidase; in insects, it is generally known as phenol oxidase; in microorganisms and humans, it is known as tyrosinase. A tetramer containing four copper atoms per molecule and two binding sites for aromatic compounds, including phenolic substrates. Oxygen has a unique binding site. Tyrosinase inhibitors are used in a wide range of applications, including beauty care, treatment of pigmented skin diseases, pest control, and food preservation.

Applications:
Polyphenol oxidase is a key enzyme in the synthesis of melanin in living organisms, browning of fruits and vegetables, and plays an important role in the tanning process during insect molting and in wound healing. Under the action of monophenolase, tyrosine is hydroxylated to L-dopa, and under the action of diphenolase, LDOPA is oxidized to dopaquinone, which undergoes a series of reactions to produce melanin. Tyrosinase is also involved in the browning reaction.
